Recipe Tuesday: Broccoli Soup NSFW

Usually I try to come up with something clever to go into the introduction. Today I will not. So. There.
Broccoli Soup

2 TBS Soy Butter

1 Onion (finely chopped)
1 Stalk of celery (finely diced)
1 medium carrot (finely diced)

8 Cups fresh or frozen broccoli florets
3 Cups Vegetable Broth

3 TBS Butter
3 TBS Flour
2 Cups Regular Soymilk
2 TBS of Nutritional Yeast

Salt & Pepper to Taste

Melt #1 over medium heat. Sautee #2 until fragrant and tender (5 minutes). Add #3, bring to a boil and lower to a simmer 15 minutes. Meanwhile combine #4 in a small saucepan over low heat – mix well. Purree Broccoli Mixture in batches (or use immersion blender) and return to original pan. Add your #4 mixture; mix well. Salt and Pepper to taste.

Oh. Yeah. I served it with these crackers.
